Somehow it’s only 4 days till Halloween and I haven’t written a single blog on pumpkins! Shame on me, I’m sorry I’ve been neglecting you! To make it up to you I’m going to share one pumpkin recipe a day for the next 4 days so if you haven’t consumed your fair share of pumpkins already, you’ll soon have no excuse!
For those in the Northern Hemisphere, October usually marks the start of autumn (“fall”) but living in the Caribbean the change in season isn’t quite so obvious! My first indicator that autumn was here was seeing all the pumpkins lined up in the supermarket. Aren’t the colours, shapes and sizes just incredible!?
It’s been a long, hot, sticky summer so I can’t tell you how excited I was when I saw them. I knew that cooler weather brought by a north-easterly wind would soon be with us & I’d be back on the water kiting in no time, what bliss! And until then I had these beauties to keep me entertained in the kitchen.
I don’t know about you, but when I think of autumn and pumpkins a Starbuck’s Pumpkin Spice Latte always springs to mind! Sadly they don’t quite fall into my no refined sugar, whole food regime that I try to maintain (12oz cup contains 330 calories, 38g of sugar & 9g of saturated fat! Eek!). So for those of you who who can’t live without a bit of pumpkin spice in their life, try out this low carb pumpkin pie smoothie. It’s great for breakfast or a snack and super filling from all the fiber that’s in pumpkin.
Yields: 1 tall cup
Time: 10 minutes
- 3/4 cup unsweetened coconut milk (or almond milk)
- 1/2 cup pumpkin (I used fresh pumpkin from the Jack-o-lanterns we made)
- 1 scoop vanilla protein powder (I use Sunfood or Garden of Life both available from Islands Naturals)
- 1 tsp cinnamon
- 1/2 tsp. pumpkin spice mix
- 1 tsp vanilla extract
- 1/2 frozen banana (you can use a small ripe banana and add ice instead)
Blend it all together and enjoy your pumpkin spice breakfast without all the sugar and fat! I haven’t tried adding coffee to this but I bet it would be great with a shot of espresso for those who need their caffeine fix in the morning 😉
P.s. OK I confess! I recently had a Pumpkin Spice Latte. I was in Orlando for the US Nationals Touch Tournament and I couldn’t resist the alluring display boards outside Starbucks beckoning me to come in and sample the delicious taste of “fall in a cup”. So I did (but without the whipped cream) & I have to admit it was good BUT it was very sweet and I couldn’t drink the whole thing. Hand on heart I love this Pumpkin Pie Smoothie so much more, I guess my taste buds are changing! Sorry Starbucks, but I’ve changed…
